✦ Add a mint sprig and a slice of sweet tinned peach
✦ Add 2 parts Precision Spirits LDN Dry Gin
✦ 1 part Demerara Syrup (bought or homemade, recipe for ours to follow)
✦ Squeeze in half a fresh blood orange & a half fresh lime (we get ours from @farmshopedinburgh) ✦ Add a half egg white
✦ Muddle all these ingredients, before dry shaking (no ice) to emulsify the egg white
✦ Wet shake (with ice) to create the fluffy texture of a classic gin sour, then fine strain into a chilled glass ✦ Top up with a Mimosa from @campervanbrew as a float, and garnish with raspberry & blood orange wedge
Drawing on a classic gin sour (gin, egg white, citrus, syrup), we wanted to incorporate our own experimental twist whilst using some great local products. Edinburgh is packed with amazing sour beers from a host of independent breweries, so this provided us with loads of interesting flavours to work into the cocktails.
This cocktail comes with a velvet-like texture, rich & luxurious from the egg white. Yet, we have sweetness from peach, tart blood orange, and fresh lifting mint sprigs. Our LDN Dry gin is the backbone of each mouthful, providing a balanced earthiness whilst the top layer of peach melba sour adds the perfect depth of flavour to each sip! 🍹
